This recipe is well used. It's a great go to in the summer because it's quick and easy and requires very little in the way of heating up the kitchen. I haven't though about it yet this year until I saw Ally's post on Copacetic in Carolina for her Soba Noodle Salad. Her recipe is next on my list to make.
Asian Noodle Salad
6 oz Soba noodles (cooked)

Asian Noodle Salad
6 oz Soba noodles (cooked)
4 oz shredded cabbage
½ cup shredded carrots
½ cup shredded radishes
½ cup red onions – sliced in halves
1 oz cashews or peanuts chopped
Sauce
5 oz Cole slaw dressing (Marzetti or you can make your own)
2 oz honey
2 Tbsp Soy Sauce
1 tsp Chili garlic sauce
To make the sauce, mix together all the ingredients. Use a small amount of the chili sauce until
you achieve the desired heat. Add the
noodles and vegetables, the toss until coated.
Serve topped with the chopped nuts.
Sometimes I like to add shrimp or shredded chicken to make
it a meal.
