Let's Eat Y'all!
It's the last Friday of the month and once again I am linking up with my friend Leigh of Hines-Sight Blog and Flip Flops and Pearls for a recipe swap. I love to eat so this is link up is one of my favorite things to do. Plus, if you haven't checked out some of Leigh's recipes, you are missing out. I make a few of them on a regular basis. You need to try the Hines Mac and Cheese. Another awesome one was a recipe that she shared was Grover's Feta and Shrimp Pasta Salad. I need to make that one again soon. It's a great dish for the summer. Today she is sharing Backporch Scampi. I am quite sure this is going to be another hit at my house.
It is said that things that grow together, go together. Meaning, if they are in season at the same time and you can find them at your local farmers market, then pairing them up is a no brainer. Nothing rings truer than with strawberries and asparagus. For the last few weeks I have been making a salad with both of these and eating the heck out of it.
Asparagus ( I like to grill mine.)
Strawberries (quartered or halved)
It's a salad so I am not going to tell you how to put it together. I'm pretty sure you can figure that out. But I will tell you that I don't add any oil. I do drizzle a little on the shrimp and asparagus when I grill it, but the only dressing I use is the balsamic vinegar. And I think by adding the goat cheese it makes the balsamic a little creamy.
This salad is so simple. It takes no time to prepare and tastes so good. Plus, I think it's really pretty. And don't you think pretty food taste better than ugly food. Or is that just me?
